No bake blueberry cheesecake is one of my all time favorite desserts to make specially in warmer weather since it taste something between ice cream and cheese cake.
Cheesecake was probably one of my favorite things that I gave up when I went vegan, and honestly I had no idea that at some point I can achieve something like this. Vegan, gluten free, no bake, I was very happy with what I have made.
This no bake blueberry cheesecake recipe is very easy to make, It looks absolutely gorgeous and is a perfect recipe if you are hosting a party. I promise it will impress all your guests.
By the way, with this recipe you can change the fruit if you wish so. You can use other berries such as, raspberries, strawberries etc. or fruits that are in season. I love that with a bit of creativity, it is absolutely possible to eat super delicious, cruelty free and healthy cheesecake.
Now without further ado, lets get into the list of ingredients we need to have ..
Ingredients
For the crust:
- 1 1/2 cup rolled oats
- 5-6 dates
- 1/2 cups coconut oil
- 2 tbs shredded coconut (optional)
Filling:
- 1 1/2 cup of raw cashew (soaked for 20 minutes)
- 1 cup coconut cream
- 1 cup vegan milk
- 1/3 cup maple syrup or brown sugar
- 1/2 blueberries for the filling 🫐
Instructions on how to make no bake blueberry cheesecake
1.For the crust, first add the rolled oats with the dates and coconut oil into a food processor and mix until you get a smooth and even crumbs mixture.
2. Press the mixture into the bottom of a (23 cm) cake pan. You can use the bottom of a glass to make it even and place the pan in a freezer for few hours for the crust to set. While the crust is setting we will prepare the filling.
3. This cheesecake has two layers, the bottom one is plain and the one on top is a blueberry mix. In a blender mix the raw cashews (that have been soaked for 20 minutes), coconut cream, vegan milk and maple syrup. Blend well and pour half of the mix in a separate bowl.
4. Now add the washed blueberries into the blender and blend again until you get beautiful and even lilac color.
5. After 2-3 hours (or until the crust has set) get the crust out and pour the first layer and put it back in the freezer for few hours, and wait until it is frozen. Please make sure that you don’t add the second layer before the first layer is COMPLETELY frozen, the colors will get mixed and that’s definitely not what we want.
6. Second layer has one of the most beautiful lilac tones to it. After the freezing process is complete, pour the second layer and put it back in the freezer again.
Once your frozen cheesecake is ready, you can take it out and decorate it with lilac flowers and blueberries.
Please make sure that you keep it in the freezer and get it out when you want to serve it.
