Vegan Carrot Dog cake

Here is a Vegan carrot dog cake recipe that you can bake for your fur baby and make them feel special. I’ve baked this cake for my Coco since he is a huge fan of dessert and me as a super responsible dog mom I make sure that he eats the best food and we avoid any type of processed food.

This vegan carrot dog cake looks super beautiful with fluffy buttercream frosting and you can chose any color of your liking, I picked blue because Coco is a boy, but you can design it however you like.

The frosting is very easy to make and it has two simple ingredients in it, cooked potatoes and vegan yogurt. I’ve also added thin layer of cornstarch icing, which is basically a corn starch with vegan milk. It is a great way of creating a perfect icing and use any type of cake decoration you like. You can use cake sprinkle, fruit or anything else you like.

I can’t tell you how much love I’ve put into making this cake. I wanted it to look like real birthday cake for my fur baby. Because we all just want them to be happy and healthy, don’t we?

I think by using what I had in the kitchen, fresh and dog friendly ingredients I’ve managed to create something cute for Coco’s 8th birthday party. Ok before I get emotional about this let’s get into the list of ingredients …

Ingredients:

For the cake

– 2 cups wholemeal flour (Preferably, if you don’t have it just use white flour)

-2 cups of shredded carrot (2 large)

– Mashed bananas as sweetener (I’ve used 2)

– 1/2 cup peanut butter

– 1 cup vegan milk (you can also use water)

– 2 tsp baking soda

For the fluffy frosting:

– 700 to 800 grams of potatoes (peeled and chopped)

– 1 cup of unsweetened and unflavored vegan yogurt

Instructions on how to make vegan carrot dog cake

1- Start by preheating the oven to 180C. Grease and line two cake pans (they can be 20 cm or 23cm/8).

2- Finely grate the carrots and mix the flour, peanut butter, milk, and the mashed bananas. Add the baking powder and mix in the carrot and stir until combined (don’t over mix the batter because it will get hard, and I’m sure that’s not what you fur baby want)

3- Divide the batter evenly between the cake pans, spread and smooth the surface. Bake it for 25 minutes or use toothpick method and make sure the centre comes out clean.

4- Cool the cakes on racks and while the cooling is happening prepare the frost.

Frosting:

Boil the potatoes until they become very soft. Whip the potato and yoghurt with a hand mixer until it becomes fluffy and smooth. It usually won’t be 100% smooth but it will do the job. For this step you will need a hand mixer to achieve that fluffy texture, you can’t do by hand.

If need be, add more milk or water to loosen the frosting, so it will be in a soft and spreadable consistency.

The first layer

So I divided the frosting into two parts. First part was plain without any food coloring and the other half I used blue food coloring. The first half goes inside the two cakes, in the middle. and the second half goes on top of the cake where it will help us with the decoration.

 I also used thin layer of icing (mix of cornstarch and vegan milk) to top it on the blue layer so I can use cake sprinkles and the colors will stand out more.
