Creamy Cauliflower Soup

Creamy cauliflower soup is a must try dish.

I am one those who likes to have soup all year round, Since soups are not only very nutrient rich but they also help with the digestion and can support our immune system.

Aren’t these good enough reasons to include soup in our diet at least two or three times a week?

Here, I would like to share one of my favourite recipes with you that I am certain you will enjoy. Cauliflower soup is a hearty and comforting dish that is packed with nutrients that can be enjoyed when in season.

This recipe has been modified a bit and I’ve added some spices that I personally enjoy. I’m not sure what is the origin of this creamy soup, however it is believed that it has originated in the mediterranean. Some of the spices in this recipe are not mediterranean, but I guess that the beauty of cooking, you can just be creative with your recipes.

Now let’s start with the how to’s and the ingredients for our creamy cauliflower soup.

Ingredients for creamy cauliflower soup

– 1 head cauliflower, cut into florets

– 1 large onion chopped

– 2 large potatoes

– 5-6 cloves of garlic

– 2 cups vegetable broth 

– 1 cup vegan cream or 2 cups plant milk of your choice

– 2 tbsp extra virgin olive oil

– 2 tbsp vegan butter 

– 1 tsp turmeric

– 2 tsp sea salt 

– 1 tsp chilli flakes

– 1 tsp pepper corns

– bunch of herbs (thyme, rosemary and bay leaf)

Instructions

In a large pot, heat the olive oil and melt the butter over medium heat. 

Chop the onions and potatoes, mince the garlic and sauté until they becomes translucent and fragrant.

Add the cauliflower florets sauté for few minutes and pour in the vegetable stock and milk (or vegan cream), bring the mixture to a boil, then reduce the heat to a simmer. 

Add the herbs and spices and cover the pot and let it cook for about 15-20 minutes, or until the cauliflower is tender and easily mashed with a fork.

Chopped Cauliflowers

Using a blender, puree the cauliflower mixture until smooth and creamy, just make sure it is not too hot when you blend it. 

Return the pureed soup to the pot and stir. Season with more salt and pepper if needed.

Ladle the creamy cauliflower soup into bowls and garnish with your choice of fresh herbs or croutons.
