Vegan Saffron Mousse

Vegan Saffron Mousse is my new obsession..!

In Persian cuisine we would add saffron to literally to everything if we could. I, personally am one of those who is obsesses with the taste and color of this beautiful spice and I use it very often in my kitchen.

Vegan saffron mousse is a quick and easy recipe that I would like to share with you. I don’t know if you have ever tried ‘traditional Persian’ ice cream, but it tastes very similar to it. ‘Bastani sonati, literally means traditional ice cream and its main ingredients are saffron, rose water and pistachio. 

The combination of these flavors are very popular in Iran and if you haven’t tried it I highly recommend you do.

For this easy recipe of vegan saffron mousse, we will use silken tofu which makes it high protein dessert. Think about it, no refined sugar, almost no fat and high on protein and flavors. You just need to let it set in the fridge for 2 to 3 hours and enjoy it.

The ingredients that we need

  • 1 pack of silken tofu (almost 350 grams)
  • 3 tbsp maple syrup
  • 1 tsp saffron
  • 2 tbsp rose water
  • Dried edible rose petals and pistachio for decoration (optional)

How to make this incredible vegan saffron mousse

First of all let’s start by blooming the saffron. There are two main ways of doing it and they are very different. One way of doing it is with boiling water and the other one is with ice. Yes, I know they are very different but let’s do the ice method and bloom saffron like Persian mom.

Pound the saffron well, then take an ice cube and put it in a small cup or a bowl. Put all the saffron directly on the ice and let it melt. When the ice is fully melted you get bloomed saffron and it will be ready to use.

Now, take the silken tofu and get rid of all the excess liquid, put it in the blender and add rose water, bloomed saffron and maple syrup. Blend it well until you get a creamy and smooth texture.

Pour it in a mousse cup and put it in the fridge for 3-4 hours until it sets. You can decorate it with with rose petals and pistachios if you like. It will not only taste amazing, it will look amazing too.
