Carrot and Sesame Salad

Carrot and sesame salad is this super delicious recipe that is less spicy and oily version of the famous Markovka salad. If you have ever tried it this is pretty similar.

Markova salad originated from Korea but became very popular in Central Asian countries and Russia. We eat that salad very often and the flavours are very intense and delicious. However, I think this is the lighter and healthier version of markovka. By the way there is raw garlic in markovka which makes the recipe great but as you can imagine eating it during the day would not be very practical.

I adore garlic in pretty much anything but i become very self-conscious if I eat it during the day, so this easy and delicious carrot and sesame salad is a great alternative.

In addition, if you are trying to watch your calories like I do go for this recipe. There is a maple syrup in this salad however, in order to have less calories you can eliminate it.

Carrot and Sesame Salad

Ingredients for carrot and sesame salad

– 3 large carrots

-2 tablespoon of sesame oil

-1 tablespoon of rice vinegar

-2 tablespoon of roasted sesame seeds

-3 tablespoon soy sauce

-2 tablespoon maple syrup

– Sea salt to taste

– Fresh lemon

– Coriander to garnish

Instructions

1- Wash the carrots well and peel one layer and throw away. In a large mixing bowl keep peeling the rest of the carrots.

2- Start by adding the soy sauce, rice vinegar (you can also use apple cider vinegar) but I prefer sweeter vinegar so I can get the citrusy flavour from lemon.

3- Add the sesame oil, please make sure you use good quality oil that has intense flavours, this salad would not be the same if you use unflavoured sesame oil.

4- Combine the maple syrup. The combination of the citrusy and sweet flavours take this salad to the next level.

5- I always prefer to use fresh lemon in my salads because it definitely makes a difference. If you don’t have fresh lemon use the store bought, but I personally don’t buy artificial lemon juice.

6- Add some roasted sesame seeds the sea salt and mix everything really well, for the garnish finely chop some coriander and add on top of the salad and mix again.

This simple yet super fresh and vibrant salad can be enjoyed for brunch, lunch or dinner.
