Spring Salad with Mango Dressing

Spring salad with mango dressing is one the most rich in taste dressings that I have ever tried. This is an improvisation and I randomly put the ingredients together because I was craving them and it happened to taste absolutely divine.

This is one of the things I love about cooking, you can always experiment and create something of your own. I am not saying that no one has made similar salad like this before, I am just encouraging you to go ahead and make it, yes please make this spring salad with mango dressing. And by the way I think that this title describes it best.

In my culture both, Armenian and Persian, we often use pomegranate in cooking, specially in Persian and in the North of Iran. As you are aware pomegranate is considered to be fruit from heaven. Not only it tastes amazing, it also a super food packed with antioxidants and anti inflammatory properties.

So while it is in season I either consume it raw with some sea salt (please make sure you try it if you haven’t) or I use it abundantly in salads.

For the dressing I have mixed avocado, mango and fresh chillies, to balance sweet and spicy flavours that is also creamy.

Now the next super food that I use very often in my salads in avocado, if you don’t like to just chop it in your salad you can always purée it or mix it in the dressing. Avocado can change its colour when it is exposed to oxygen but that should not be a reason for you to avoid this God-given health bomb.

Avocado helps me feel full for a long time and indirectly helps me cut down my calories so I use them regularly for that reason as well.

The ingredients that we need for this delicious salad are as follows:

  • Spinach 2 cups
  • Chopped Cucumber 2 cups
  • Chopped tomatoes 1 cup
  • Chopped capsicum 1 cup
  • Pomegranate seeds 1 cup

Mango and avocado dressing

  • Mango slices 1/2 cup
  • Avocado 1/2
  • Fresh mint 1/2 cup
  • Few slices of chili (Up to you how spicy you like it to be)
  • Extra virgin olive oil 3tbsp (I prefer you use good quality olive oil)
  • Soy sauce 2 tbsp
  • Fresh lemon juice 2 tbsp
  • Salt and smoked paprika for seasoning

Instructions for Spring Salad with Mango Dressing:

After you get the ingredients, wash them well and pat them dry. Chop the vegetables cucumber, tomatoes and capsicum into bite sized pieces.

Evenly cut the spinach after it is washed properly and is dry. and add all the ingredients into a large bowl.

Now it is time to make the magical dressing, in a mini food processor or a blender add your half avocado and mango slices. Then mix in the seasonings and ingredients above and mix them well until you get a creamy texture dressing.

Taste the dressing and adjust if necessary. Pour it over your salad and mix in the pomegranate and pumpkin seeds.

The reason that I always add seeds to my salad is for its good or unsaturated fat. Most seeds are very nutrient rich and are also great source of protein specially if you are vegan. In addition, you can always use flaxseeds, sunflower seeds and sesame seeds if you prefer, so I leave that part up to your preference.
