Quinoa salad with silken tofu dressing

This quinoa salad with silken tofu dressing is one of the healthiest and high protein salads that you can make. Quinoa is a great source of complete protein since it contains all essential amino acids. On top of that the dressing for this salad is with silken tofu which is another great source of vegan protein. Just in case you didn’t know, silken tofu has almost 8 grams of protein and is high on calcium and vitamin B12, so I think you have a picture of how nutrient dense this salad is.

For this recipe, I’ve used two different types of cabbages and as you are aware cabbages are great source of anti oxidants and anti inflammation. 

As someone who has been vegan for 8 years, I’ve been doing lots of different experiments on dishes and this recipe is definitely one of my favorites, you can make this salad and keep it in the fridge and always use it as a post work out meal.

Quinoa Salad Ingredients

– 1 cup quinoa, cooked and cooled

– 3 cups mixed chopped vegetables (I’ve used white and purple cabbage, cucumber and carrots)

– 1/4 cup chopped fresh herbs (coriander, basil or you can blend it in the salad dressing)

– Salt and pepper to taste

Silken Tofu Dressing Ingredients:

– 1 block of silken tofu (350 grams)

– 2 tbsp lemon juice or vinegar

– 3 tbsp extra virgin olive oil

-1 tbsp peanut butter

– 2-3 garlic clove

– 1 tbsp soy sauce

– Salt to taste

How to make quinoa salad with silken tofu dressing:

1. Make the dressing by blending all the dressing ingredients in a food processor or blender until smooth and creamy. Season with salt and pepper to taste.

2. In a large bowl, combine the cooked quinoa, chopped vegetables, fresh herbs, and toasted nuts/seeds. 

3. Drizzle the silken tofu dressing over the quinoa salad and toss gently to coat.

4. Refrigerate for at least one hour to let the flavors to meld.
