Let me tell you how I got inspired to make this beautiful vegan orange cake.
I was walking my dog in the park and saw these gorgeous acorns on the ground. They looked absolutely gorgeous so I started collecting them but didn’t know how I was going to use them.
So I took them with me and washed them thoroughly and used some as home decorative pieces and decided that I also need to use them as food decoration.
There it was, I saw bowl of oranges next to these acorns and imagined the colors together and since I’m a huge fan of vegan orange cake did not wait any longer and started to bake.
The ingredients that we will need for this vegan orange cake is as follows ..
Ingredients:
– 4 cups of flour
– 1 ½ cups of brown sugar
– 1 tsp baking soda
– 2 tsp baking powder
– 1 tsp vanilla powder or extract
– 1 ½ cups vegan milk
– (Fresh) orange juice 1 cup
– Half a cup canola or vegetable oil
– 1 tbsp apple cider vinegar
– 2 tbsp orange zest
Orange frosting 🍊
– Julienned orange peel
– 1 tsp saffron (optional)
– ½ cup powdered sugar
– 1 tbsp rose water
– 2 tbsp corn starch
– 1 cup freshly squeezed juice
Instructions for this heavenly orange cake
Before we get into the recipe of this cake, I would like to say that I personally use fresh orange juice and believe it or not it does make a difference. But its ok if you use store bought orange juice.
1. Preheat your oven to 180°C and grease two round cake pans.
2. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, basically the dry ingredients.
3. Mix the orange juice, almond milk, vegetable oil, orange zest, and vanilla extract.
4. Pour the wet ingredients into the dry ingredients and stir until just combined well but don’t over mix it.
5. Separate the batter equally and our the batter into the prepared cake pan and smooth the top with a spatula.
6. Bake in the preheated oven for 20-25 minutes or until a toothpick inserted into the center comes out clean.
7. While the cake is baking, prepare the orange frosting by adding the powdered sugar, saffron and rose water, orange peel and juice and bring to boil. Slowly add the corn starch and stir frequently.
8. Once the cake is done, remove it from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.
9. Now it’s time to drizzle the orange frost over the top and In the middle of two layers.
One of the most exciting parts is to decorate the cake, you can do what I did with mine or simply get creative and use your favourite items of decoration.
