Vegan Quinoa Brownies are gluten free, refined sugar free, dairy and egg free… aren’t these the best words we all want to hear when it comes to eating dessert.
I enjoy having desserts, and not having them is simply impossible in my opinion. Since I go to the gym frequently and I am trying to have the cleanest and healthiest diet possible I made this brownies.
These are one of the best brownies I’ve ever tried and they are packed with protein, fiber and antioxidants.
Typical brownies have dense, rich and fudgy texture and believe it or not this is completely doable with quinoa. So for this recipe the only sweetener that I’ve used are two bananas. You can always add good quality maple syrup or simply add stevia to it but I am very satisfied with this level or sweetness.
Since I started going to the gym regularly I’ve been looking for ways to increase my daily intake of protein. One thing that I love doing is to add vegan protein powder to my desserts and you can do that with this recipe as well.
Let’s talk a bit about the texture..
These brownies are a bit different than the classic ones that are very moist. I didn’t use any oil or butter in them because was trying to make them as healthy as possible.
I even skipped the maple syrup for that very same reason and only used bananas the main source of sweetener.
So what ingredients do we need for Vegan Quinoa Brownies
– 2 cups of quinoa (soaked for 20 minutes)
-1 cup of good quality cacao powder
-2 cups of vegan milk (I’ve used soy milk)
-1/2 cups of maple syrup (optional) you can also use stevia as sweetener
-1 tbsp vanilla extract
-2 bananas
-1 tbsp nut butter
-2 tsp of baking powder
-1 tsp baking soda
– 1/2 cups vegan dark chocolate chips
Instructions
1. Preheat your oven to 180°C and lightly grease the baking pan.
2. In a small bowl, soak the quinoas for about 20 minutes and set aside while preparing the mix.
3. In the blender add the bananas, nut butter (I used organic peanut butter, but you can use any nut butter). Add the cacao powder, baking soda and baking powder.
4. Now add the quinoa and add the vegan milk (I used soy milk for this recipe), vanilla extract and blend everything together really well until you get a very creamy texture.
5. As mentioned before, if you prefer to add vegan protein powder or more sweetener you can absolutely do it and blend in with the rest of the ingredients.
6. Pour the batter into the prepared baking pan and spread it out evenly. You can mix in more chocolate chips if you like of just add it on top of the batter.
7. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
8. Remove the brownies from the oven and let the brownies cool completely by placing them on a cooling rack before cutting them into squares.
